Once you have made this, you will probably never make another flavour cheesecake again. A winner at all parties and BBQs- its delicious! I actually made this for a party and my husband threatened to eat a slice if I didn’t make him a mini version, so just be warned you may need to make more than you think!
This recipe is based on one by Nigella but edited down to make it simpler. It is really easy to make and you really can’t got wrong. It requires just wo bowls, no baking, is easy to adapt and I normally just follow the ingredients roughly adding more chocolate and adding extras to taste. The hardest part is actually giving it time to set before eating it!
- 250g Digestive biscuits
- 75g Butter
- 1 tablespoon of Nutella (or any chocolate spread)
- You can also add some chopped hazelnuts, use other types of biscuits or my favourite add chocolate chips to the base
- 600g Cream cheese
- 60g Icing sugar
- 400g of Nutella (or any chocolate spread)
First make the base by crushing or blending the biscuits until they resemble fine bread crumbs. Then put the butter and Nutella in the microwave for 20 seconds to soften. Add the liquid mixture to the biscuits and combine.
Combine and the mixture will start to come together- if it is too dry then simply add some more Nutella. If you are adding chopped hazelnuts or chocolate chips mix them in at this point. In terms of a tin- you can use a silicone mould which allows you to pop it out easily but I find a metal spring bottom cake tin is the best. Because the metal cools in the fridge it helps to set it faster and ensures the cheesecake stays in shape. I tend to use a 20cm tin, but again you can use whatever you have, the smaller the tin the deeper base you will get on each slice which is never a bad thing.
Take which ever tin you have chosen to use and press the base into the bottom. I don’t line the tin as once set it tends to come away without an issue. Use the back of the wooden spoon or the back of your hand to press it down firm. Then place in the fridge to chill for at least an hour.
When the base is nearly chilled make the topping. Put the cream cheese with the sifted icing sugar into a bowl. Mix together until smooth and then mix in the Nutella.
Once mixed spoon on top of the base and spread out evenly. If you want o add any decoration now is the time to do it while the mixture is still sticky. Once finished place in the fridge to set for at least 2 hours- ideally overnight.
Now sit back, have a cup of tea and try not to eat it before it sets!
Once set you can take it out of its tin, and put on a serving plate. The colder it is the easier it is to slice so its best left in the fridge until required. Finally enjoy! YUM YUM!!
